All About Beef Shares

Read through our TCC Beef Share Guide to help answer any questions you may have about our beef share process.

HOW GOOD IS TCC BEEF?

Typically, our beef grades prime or choice, the top two grades of beef available that you would receive in a nice restaurant. We deliver that same quality beef directly to you; at a lower price than the cost you’d pay in a nice restaurant.

WHAT CUTS OF MEAT WILL I GET IF I ORDER A BEEF SHARE?

That’s up to you! We want the package count and cuts to work for you and your family. You can choose how many steaks per package, how thick, etc.

Beef Share Options & Specifics:

If you choose ¼ beef share, it is a standard set of cuts so that we can split 1/2 beef evenly between two customers. If you order ½ or a whole beef share, you get to choose your cuts and talk with us directly about what you want.

All shares include ground beef, roasts, premium steaks, mid-level steaks and an assortment of limited cuts like tri tip or flank steak. If there are cuts you do not prefer, you can choose to have them turned into ground beef.

With the ½ or whole beef share, you can choose a bone-in cut sheet or a boneless cut sheet (bone-in is standard). This will impact what steaks you get. For example, if you choose the boneless cut sheet, you would get Filet Mignon and New York Steaks, whereas if you chose the bone-in cut sheet, you would get T-Bone steaks.

Please note, cut sheets are due 2 1/2 weeks before your beef share pickup date. This allows us to reach out with any questions we have for you and gives the butcher time to cut, wrap and fully freeze your beef share before your pickup date. If we cannot get ahold of you or you do not return the cut sheet to us before that 2 1/2 weeks we will receive standard cuts for your beef share.

HOW DOES YOUR BEEF SHARE PRICING WORK?

The cost of our beef shares is based on the hanging weight of the animal.

What is the hanging weight?

The hanging weight is the weight of the beef after it has been killed, the blood drained, its head, hide, feet entrails and organs have been removed.

The approximate hanging weight of a whole animal is 800lbs., a half 400lbs. and a 1/4 share is 200 lbs.

As a convenience to our customers, TCC covers all processing charges, which means you only have to pay once to TCC.

Payment to TCC is due, the Friday before your beef share pickup date.

HOW LONG CAN I FREEZE MY BEEF SHARE ONCE I GET IT?

We recommend consuming your frozen beef within 12 months from purchase, after that the quality of the beef may decrease some as time goes on.

WHAT’S IN THE FEED YOU GIVE YOUR HERD?

For 85% of the life of our beef, they graze feed in the Owyhee Mountains and our ranches in southern Idaho and Eastern Oregon.  The cows and calves head up the mountains in March and then in October and November of each year, we are moving them back down the mountains to our homeplace in Oreana, ID.

For the last 120-150 days of their life, our cattle are fed a ration of grass hay and alfalfa, with a side of grain, all grown in our local valley. Finishing with grain provides superior marbling, tenderness and rich taste in our all natural beef.

Your purchase is not only supporting our ranch family but also the farm families that raise the feed we finish our beef with.
